Hello Again!

Where did you go? Where have you been?

Welp, we are actually extraterrestrial beings that vacation on Planet Earth during the Winter season and we started this chocolate candy business to blend in…

No…? Joking aside, so much happens in a year! We apologize for not keeping up with the blog. We actually loved using this medium to share with you all. It is a bit odd, since blogs are normally used to share skills, how-tos, DIY, or have very specific purposes, such as a travel journey. David and I are very private people, life lessons - AMEN!, so the sharing on social media comes with some difficulty for us. However, we see the benefit of having social media for our business.


That being said, we didn’t have a clear focus on the blog and were just sharing our journey. A journey that got so busy, so fast during the summer the blog was placed on the back burner. I had to complete 150 hours in a commercial kitchen in order to complete a culinary certification. Idalia and Colt, at Wasabi’s, were kind enough to let me try my luck in their kitchen all summer long. What a blessing! Learning what I need to improve on and not giving up when I really believed I couldn’t do it was exhilarating. For someone who likes to work with precision, time, and detail, it felt like a cooking competition every time an order came in. The stress was through the roof!

Health issues ensued (NOT related to the stress) with surgery and actual recovery times. Wowza! We feel beyond blessed that we have each other. We also realized how difficult it can be for a missing piece to not function 100% when it is an integral part. Anyhow, everybody is doing great now, I graduated with a culinary certificate from Auguste Escoffier School of Culinary Arts (highly recommended if you are looking for that type of schooling), and jumped right into the Baking and Pastry instruction at Escoffier.

David took on a huge burden working overtime on the chocolate, our wholesale accounts, while loving on our boys without complaint (full-time job in itself). He created some amazing products and put into motion a HUGE surprise we have coming for this year! The amount of paperwork that goes into any kind of business is incredible and David is a whiz at it. One accomplishment David and I are particularly proud of from 2018, that took paperwork to the extreme, was Homer Truffle Company, LLC becoming certified as a Veteran-owned business by our federal government.

We had been working on it since April 2018!

It came two weeks ago written on official letterhead, our certification letter read: On behalf of the U.S. Department of Veterans Affairs (VA), Center for Verification and Evaluation (CVE), I am writing to inform you that Homer Truffle Co., LLC has been verified as a Veteran-Owned Small Business (VOSB) [...] Thank you for your service to our country and for continuing to serve America through small business ownership.

For HTC, it means it is recognized and can claim to be veteran-owned OFFICIALLY. We get a pin, a symbol from the federal government that we can attach to everything and anything related to our business that identifies us as a veteran-owned business.

For us personally, it is verification and a reminder that HTC has come a LONG way from its inception in 2017 and still has a LONGER way to go in an effort to maintain sustainability. It represents the hard work of the endless cycle of reaching doors and opening them, or walking out of doors and closing them behind you.

This pin represents our 2018 and what is to come in 2019. Many things became clear. Our mission as a chocolate candy store, the method of approach to our growth, our aura, aligning each of our obligations and tasks just right to make them materialize, and rethinking marketing to fit HTC. We have a clear focus on the year ahead and the best part of ALL OF IT: we are doing it as a family.

As far as the blog, expect it once a month. Our focus will still be our journey throughout the year on our chocolate adventures. This time it will come out at the end of the month and it will highlight someone we are working with. This world is so small and filled with so many large people we want to share with our readers.
